This is a new recipe for me but one that turned out amazing.Whole wheat pasta is packed full of fiber and if you pick the right brand the flavor is great too. This homemade meat sauce is extremely easy to make and the entire meal will only take two pots.
1 box Whole Wheat Penne Pasta ( You don’t have to use it all)
1 large can diced tomatoes. (If you can find the brand that is already flavored with basil and garlic that would be perfect and will save time)
1 Large can tomato sauce
4 links Italian Turkey Sausage
1 Medium yellow onion diced
2 tsp Garlic Powder
2 tsp Italian Seasoning
2 tsp Olive Oil
Salt and pepper to taste
Sauce: Heat large pot to medium high , remove sausage from casing and brown. Once cooked, drain meat (if needed) and set aside. In same pot over medium high heat add olive oil. Once oil is hot add onions and cook till translucent (about 7 minutes). Add a dash of salt, pepper and garlic powder.Return meat to pot.
Drain can of diced tomatoes and add to pot. Add a dash of salt (not too much though) Cook for approximately 20 minutes and then add can of tomato sauce. Add sausage and cook until sauce is thickened. Salt to taste. Be VERY careful to not over salt.
While sauce is cooking, bring 4 cups of water to boil. Cook Pasta and drain. Add immediately to sauce and heat until noodles are coated evenly.
Tip: Add a mixture of different bell peppers to sauce for added nutrients. You could even add zucchini. Adding red pepper flakes will give it a spicy kick. Just get creative and as always, enjoy!
